  • Oh, I was being silly. There’s nothing wrong with cheese on chili.

    I did grow up in Texas, so I do have strong feelings about chili, but I also think people should eat what they like. But to me, for example, things like “white” chili are… tasty dishes but not chili. But I also accept that they are, in fact, chili, too. If that makes sense. :)

    Ironically, I’m not one of these chili “purists” who says it should be basically cubed beef cooked in spices, which is closer to the original. For one, I must have tomato products in there. Also, although I’m from Texas, while my current recipe does not have beans, I am all for beans in chili - as a lot in Texas actually are, just the more vocal aren’t.

    So in that sense of playing around and being a bit silly, chili should be meat, spices, some sort of tomatoes, can have onions and aromatics, can have beans, can have some sort of thickening starch (I use grits), but things like cheese or chopped onions or sour cream on top are for pansy non-Texans or non-real-chili-eaters or some sillines like that.

    So completely being silly about the cheese, it actually looks very tasty :)


  • Well, let me just say you are, in fact, as legit as I thought, even more, and hopefully you caught the ‘negatives’ were all silly, and let me re-emphasize the praise. :)

    I’m proud of my cooking in general, but on chili - I definitely haven’t taken the steps to work with the actual dried chiles like that. But I’m happy with my recipe at the moment, and it’s all a balance of energy (with health issues) and results :)

  • I can get a lot of the way there, I was mostly phrasing as praise for how good yours looked :)

    My main limitation is the apartment’s cooking conundrum: Damned smoke alarms and insufficient fans to pull smoke. lol. I have a two-burner griddle, and even though I’m recently back on electric which sucks, it’s alright and I can do this sort of thing with modifications, yeah.

    I guess that’s one reason I don’t do steak here, though. I don’t mind spending to let the pros with the equipment handle it. But pretty much anything else, ya can’t stop me :)



  • In rereading my comment, my ADHD didn’t allow me to note that I was intending them to be canned, perhaps buying time from another cannery not operating at full capacity.

    I think if we had programs to look for excess produce, it might make sense. We already have logistics out there. I think it could still economically make sense - supporting farmers, still low cost food getting to food banks (who order food wholesale from somewhere, since monetary donations go further, so we know they use money to purchase things. Maybe agreements with local grocery stores to have these things delivered there… or wherever they pick up the wholesale food from).

    Even if it did make sense, we still wouldn’t do it. I just think it might be something we could figure out had we the will to.




  • As a Virginian, this has hit me hard.

    I’m tired, boss.

    We need to break out the guillotines and fucking fix it from the top down, and by the top, I mean the oligarchs spending all the money to corrupt most of our politicians. That’s more important than ousting Republicans, although that would be the next fucking step.

    :sigh:

    But we’re all not starving QUITE enough to get into the streets. They’re fucking dumb, but they know they can only push us so far. And they’re slowly pushing more and more and more to find that limit. And it’s clear we’re not there yet. We’ll pay $10/gallon for gas and see our food prices double if it’s over the next 2-3 years and we still won’t riot, and more and more of the ones on the bottom lose housing, lose their lives for lack of medical care.

    We’re dying, but most of us are JUST comfortable enough and JUST precarious enough to be scared to riot.

    Fuck all of this. I’m on dialysis. I might have a decade in me, but there’s a good fucking chance I won’t. I got double-screwed by this fucking country and it has greatly shortened my life. But I’m still lucky because I’ve almost always had housing, I’ve always had food sometimes with the help of a food bank, and even more lucky with some occasional help from my dad for emergencies. Yeah. 50 years old and I owe my dad thousands over the years for occasional “oh shit no car means I lose my job” help…

    It feels useless. I almost feel like giving up and stopping dialysis and saying fuck it, but I ain’t gonna do that because the human body is surprisingly resiliant about wanting to live for as long as possible. And hey, I got food and right now I have decent medical care, and I even just got disability which will make it easier to scrape by each month until I’m dead.

    But goddamn if this timeline doesn’t suck.

    Wait, let me explain.

    First of all, though, cheese on chili is wrong and I will stand by that.

    However.

    That looks very tasty, adn the “fuck you” is SOLELY because you are wherever you are and not HERE with a spare bowl of chili and a piece of that cornbread. ;-)

    Joking aside, I don’t actually judge anyone for cheese or whatever. I might judge the people who put the weird spiced “chili” on pasta with a ton of other ingredients, but even then, I’m sure it’s tasty and I applaud them, I’m just not sure it’s still chili…

    Anyway, your chili and cornbread both look delicious. I’m overdue to make a batch of chili, so I might just have to. I’ve gotten where I use ground pork and ground turkey and beef better-than-bouillon and it really works well imho. (My chili is basically smoked paprika, cayenne, cumin, garlic, touch of oregano, salt, msg, pepper, ground meat browned nicely, plenty of crushed tomatoes, some diced tomato, touch of smoke powder (like liquid smoke but better), and when it’s nice and tender, I add a little bit of stone ground yellow grits to thicken slightly. I’ll gladly serve with beans, but with my failed kidneys, I have to limit my beans.

    Can’t tell what all is in yours, but it looks really good. :) (Even the cheese!)
